Ingredients

  • 1/2 teaspoon agave nectar
  • 1/4 teaspoon black pepper
  • 1 large carrot, shaved
  • 1 cup cherry tomatoes
  • 1 cooked chicken breast
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon dried tarragon
  • 4 cups mixed greens
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon sea salt
  • 2 teaspoons minced shallots
  • 2 tablespoons toasted sunflower seeds
  • 1 tablespoon tarragon vinegar

Cooking Instructions


Step 1

  • In a blender, combine olive oil, vinegar, tarragon, mustard, shallots, agave, salt, and pepper. Blend until well combined. Taste and adjust salt, pepper and agave, if needed. In a large bowl, combine the washed greens, arugula and tomato. Scatter cooked chicken breast and carrot shavings over top of greens and tomato.
