Ingredients

  • 1 tablespoon Baking powder
  • 1/2 tablespoon Brown sugar
  • 1 tablespoon Unsweetened desiccated coconut flakes
  • 50 grams Corn oil
  • 90 grams Egg
  • 220 grams All-purpose flour
  • 120 ml Milk
  • 500 grams Canned pineapples, diced
  • 1/2 teaspoon Salt
  • 100 grams Sugar
  • 1 teaspoon Vanilla extract

Cooking Instructions


Step 1

  • Preheat oven to 200C/400F. Sift flour then add baking powder, salt, sugar, and coconut and mix through.Beat eggs and vanilla extract well then add oil, milk and pineapple and stir well.

  • Add dry mixture to wet ingredients and combine quickly. Take care not to over-mix.Divide the batter into 12 greased or lined muffin cups, about full.
