Ingredients

  • 1/4 cup brown sugar, packed
  • 1/3 cup dark molasses
  • 2 teaspoons Dijon mustard
  • 1 pound dried navy beans, rinsed and soaked overnight
  • Kosher salt to taste
  • 1 tablespoon liquid smoke
  • 3/4 pound salt pork, rinsed and cut into 1/2-inch cubes (1 12- ounce package)
  • Water to cover
  • 1 cup chopped sweet yellow onion
