Ingredients

  • 3/4 cup lentils
  • 2 1/2 cups vegetable stock
  • 1 cup water
  • 1/4 cup dry red wine
  • 1 pound tomatoes, skinned and seeded
  • 1 carrot, sliced
  • 1 celery stalk, sliced
  • 1 garlic clove, minced
  • 1 onion, chopped
  • 2 teaspoons tsp fresh chopped basil or ½ dried
  • 1 bay leaf
  • 6 tablespoons grated Parmesan

Cooking Instructions


Step 1

  • Combine all ingredients in a large pot. Bring to a boil then reduce the heat to low and allow to simmer for 20-25 minutes. Stir occasionally. Fish out the bay leaf, add in cheese and serve.
