Ingredients

  • 1 large carrot, shredded or cut into fine strips
  • 3 sprinkles of dried red chili flakes
  • 2/3 teaspoon Dijon mustard
  • 1/2 teaspoon dried mint
  • 1/2 English cucumber, thinly sliced into half moon shapes
  • 1 tablespoon fresh ginger, minced or grated
  • 1/4 cup fresh parsley or cilantro, chopped
  • 2 fresh green chilies, seeded and minced
  • 5 to 6 green onions, white and pale green parts, sliced into thin rounds
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • juice from 1 lime (2 tablespoons)
  • 2 cups Napa cabbage, white part cut into fine strips and green part torn into pieces
  • 1/2 teaspoon paprika
  • 1 cup plain yogurt
  • 1 teaspoon chat masala
  • 1 medium red bell pepper, seeded and cut into fine strips or diced
  • 2 cups red cabbage, shredded or cut into fine strips
  • sea salt and fresh cracked black pepper to taste
