- 1 large mango, peeled and cut into 1/2-inch dice

- 1/4 onion, minced
- 2 pounds pork loin chops

- 1 scallion, chopped
- 1/4 cup chopped white onion

- To make the salsa:In a bowl, stir together the mango, avocado, onion, lime juice, cilantro, and jalapeƱo. Cover the salsa and refrigerate until ready to serve.

- Add the garlic, onion, scallion, cumin, olive oil, salt and pepper evenly over both sides of the chops, cover, and refrigerate for at least 3 hours or up to overnight.Prepare a grill. Season the pork chops on both sides with salt.
