- 3/4 cup lentils
- 2 1/2 cups vegetable stock
- 1 cup water
- 1/4 cup dry red wine
- 1 pound tomatoes, skinned and seeded
- 1 carrot, sliced
- 1 celery stalk, sliced
- 1 garlic clove, minced
- 1 onion, chopped
- 2 teaspoons tsp fresh chopped basil or ½ dried
- 1 bay leaf
- 6 tablespoons grated Parmesan

Cooking Instructions
Step 1
- Combine all ingredients in a large pot. Bring to a boil then reduce the heat to low and allow to simmer for 20-25 minutes. Stir occasionally. Fish out the bay leaf, add in cheese and serve.
