Ingredients

  • 3 Cherry tomatoes, diced
  • Green pepper, diced
  • 1 tablespoon Honey
  • 3 teaspoons olive oil
  • 3 tablespoons Black pepper peanuts
  • 3 tablespoons Red wine vinegar
  • salt and pepper
  • 3 Sundried tomatoes, diced
  • Yellow pepper, diced
  • 2 cups Zucchini, unskinned and cubed

Cooking Instructions


Step 1

  • In a large bowl, toss together the first six ingredients. In a jar with a tight-fitting lid, combine the salad dressing ingredients and shake well.

  • Pour over salad and toss to coat.

Step 3

  • Layer a serving bowl with some salad leaves, and add in the tossed mixture. Cover and chill for 1 hour before serving.
